Jimmy's Squirrel Stew

Ahh, now you"ll know what to do with the day's harvest. Squirrrel stew fit for a king!

Time: 1 hrs and 20 mins   •   Prep Time: 20 min   •   Cook Time: 1 hrs
Serving Size: 4 people

Ingredients

4 squirrels, cut into serving pieces
1 quart water
1 bay leaf
1 onion, cut into quarters
1 carrot
salt and pepper to taste
1 large can stew vegetables
1 can cream of mushroom soup
1 can cream of celery soup

Directions

Place the squirrel , bay leaf, onion, carrot salt and pepper into large dutch oven with 1 quart of water. Cover and cook until meat is tender. Remove meat from the pan, place in a casserole dish, mix stew vegetables with mushroom and celery soups and pour over meat. Place covered casserole in oven at 350 degrees for 35 minutes. Remove cover from casserole, turn oven to 425 degrees and continue cooking until brown.

Tips

Serve with hot, homemade biscuits for that satisfying belly-filling feeling!!
