Venison Haunch Roast Stuffed with Apple

This is a great recipe but requires a water smoker. It also requires a pound of bacon, so you KNOW it's gonna' be good!

Serving Size: 10-12 Servings

Ingredients

Apple Stuffing:
3 cups of peeled and chopped apples (any variety)
1/2 cup raisins
4 tbsp. butter
1/2 tsp. ground cinnamon
1/2 tsp.salt
1/2 tsp. pepper

1 venison hind quarter, butterflied and boned
1 lb. bacon

Special Equipment: a water smoker

Directions

Set up your water smoker according to the manufacturer's instructions.

In a large skillet, combine all stuffing ingredients and cook over medium heat for 5 minutes. Remove from heat and let it cool to room temperature.

Stuff the venison hind quarter with the apple stuffing mixture. Roll the butterflied venison haunch to cover the stuffing. Cover top and bottom of hind quarter with bacon and attach with toothpicks. Cook in a water smoker until desired degree of doneness.

Tips

Because each smoker seems to cook a little differently, smoke it to your desired level of doneness.
