Wild Turkey Fried Rice

Fire up the wok! Here's a fun and different way to prepare an American wild turkey with an Asian twist. Eggs, meat, veggies...this recipes has a little bit of everything and is super-simple.

Time: 30 min   •   Prep Time: 10 min   •   Cook Time: 20 min
Serving Size: 4

Ingredients

6 teaspoons vegetable oil (divided, so you won't add it all at once)
2 medium to large eggs
1 small bell pepper, chopped
1 cup of diced turkey breast
1 small onion, chopped
Soy sauce, as desired
2 medium carrots, sliced
2 cups cooked rice
1 cup broccoli florets

Directions

Heat wok. Add 2 teaspoons oil. Add pepper, onion, carrots and broccoli florets. Cook until crisp, yet tender. Remove, and set aside. Add 2 more teaspoons oil to wok. Add eggs, scramble, remove; set aside. Add remaining oil. Add turkey breast, and stir-fry until cooked, about 10 minutes. Add soy sauce to taste. Return vegetables and eggs to wok. Add rice and additional soy sauce, as desired. Mix thoroughly and serve hot.

Tips

Soy sauce can be included when making the dish or added later to taste.
