Autumn Grilled Quail

Great for grilling out when there is a cool nip in the air.

Time: 55 min   •   Prep Time: 10 min   •   Cook Time: 45 min
Serving Size: serves approximately four

Ingredients

1 quail per person
1 slice salt pork for each quail
1 stick melted butter
Garlic powder to taste
Seasoning salt and seasoned pepper

Directions

Mix seasoning with butter and heat in small sauce pan. Wrap salt pork around each bird and place birds on rotisserie spit. Brush with seasoned , melted butter. Cook over medium heat on gas grill with cover down. Brush often with seasoned butter. After 30 minutes, pierce bird with a fork in breast to test for doneness-juice should be pink.

Tips

This goes well with Hot German Potato Salad, and baked beans!!
