Tropical Dreaming Sweet and Sour Caribou Ribs

Put on your flowered shirt and a little Caribbean music and "get this done"!

Time: 3 hrs   •   Prep Time: 20 min   •   Cook Time: 1 hrs
Serving Size: 2-4 people

Ingredients

1 rack caribou ribs
seasoning salt and pepper
1/2 cup soy sauce
1/4 cup vegetable oil
1/2 cup honey
1/2 cup red wine vinegar
1 can crushed unsweetened pineapple with juice
1 tsp. ginger

Directions

Rub seasoning salt and pepper into ribs. Thread ribs onto spit. Make sauce with all remaining ingredients. Place ribs on rotisserie spit over medium heat, put hood down, and cook for 30 minutes. Baste with sweet and sour sauce for another 30 minutes of cooking time.

Tips

Serve with additional sweet and sour sauce and fresh pineapple garnish. Throw in some grilled zucchini, lettuce salad and hot garlic bread for a meal to remember.
