Mexican Lasagna

This is one dish that is so delicious you won't have leftovers!

Time: 45 min   •   Prep Time: 15 min   •   Cook Time: 30 min
Serving Size: 4

Ingredients

2 pounds ground turkey
6 ounces Velveeta Cheese, cut into 1-inch chunks
1 cup Thick and Chunky Medium Salsa
6 large flower tortillas
3/4 cup shredded Colby Jack cheese

Directions

Preheat oven to 400 degrees F. Brown meat in large skillet; drain. Add 1/4 cup water and Velveeta Cheese. Stir until Velveeta is melted. Remove from heat and stir in salsa.
Spray a 9x13 pan with cooking spray. Spread 1/4 of the meat mixture into dish. Top with 2 tortillas. Repeat layers two times. Top with remaining meat mixture; sprinkle with cheese. Cover tightly with foil. bake 30 minutes then let stand 5 minutes before serving.

Tips

You may want to add some black beans to the meat or top the finished lasagna with chopped tomatoes, shredded lettuce or sliced olives. Serve with a dollop of sour cream on top of each slice.
