This is an easy and delicious way to broil backstrap.

Time: 20 min   •   Prep Time: 10 min   •   Cook Time: 10 min
Serving Size: 41005

Ingredients

3 pounds venison backstrap
3 teaspoons garlic salt
1 1/2 teaspoon black pepper
1 stick butter
bacon strips

Directions

To stop the meat from curling, diagonally score topside of backstrap with a sharp knife. Rub all sides and ends of meat with garlic salt and pepper. Lay bacon strips on meat and place in broiling pan. Preheat broiler and position meat five to six inches below heating element. Sear both sides of meat. Place butter on top of backstrap so that it melts and bastes the meat. Continue broiling until desired doneness is obtained. You may want to use a meat thermometer to check that the meat is cooked properly.
